As you well know of my affinity for dips of any kind, you won’t be surprised to hear that we are always on the lookout for a new one. Our favorites are the spinach and artichoke and guacamole (recipes here) but have recently been a fan of a feta, corn, and black bean mix as well as a buffalo chicken delight. While these are quite tasty, they are very much tailgaiting items, so when we came across a more, well…elegant, dip I was excited for new depth to my appetizer menu.
Over Thanksgiving and Christmas while we were with family we had this delicious (and rather addicting!) spread that Mama Lisa (my sweet mother-in-law) made and thankfully we finally remembered to ask for the recipe. It was actually in a cookbook I had gotten while we were engaged from the Sunday school class they (and a lot of our friends’ parents) attend had put together and the recipe was even from one of those parents. Funny how that works out. We were in an adventurous mood and decided to make it last night. It was every bit as delightful and incredibly easy to make.
Chunky Cheddar Dip

Ingredients
- 1 block (8oz) cheddar cheese (shredded)
- 2 cups pecans (chopped)
- 8 to 10 green onions (a bunch)
- 1/2-1 tablespoon mayo to moisten (we use light)
- 1 jar (8 oz) pepper jelly (the red one - we often used our homemade one)
Instructions
- use grater to shred cheese block (so much better than pre shredded!)
- mix cheese, pecans, onions, and mayo
- spread in a pie plate, quiche dish, or flan pan (really, who has one of these?)
- cover and refridgerate for at least 2 hours or overnight
- when ready to serve, cover top with jelly
- serve as a spread with crackers (we use town house reduced fat)

We had lots of pecans from grandmother’s house that Glenn and Pops gathered during some yard work and that we shelled over Thanksgiving and have been using them in various recipes so it was perfect to use here. Pecans are so expensive these days and we were able to get a good many pounds to take home and share.
You can’t beat fresh ingredients! Also, I saw on Pinterest how to use the roots from the green onions to grow new stems and that is currently in the process as well. Hopefully soon I will have some new sprouts to use!
