Simple Pickled Onion Relish Using Leftovers | Recipe

I’m always looking for easy and inexpensive ways to make or purchase items, but I’m equally as enthusiastic about ensuring what we already have does not go to waste. This goes for clothing, decor, repurposing storage items, and of course leftover food. Recently I have been pondering what to do with all of the remains from the many pickle jars we have consumed. We have numerous jars of spicy pickles (recipe here!) and when we devour one, I’ve kept it in the fridge thinking one day I would figure out what to do with all the onions, peppers, and juices. We really like onions and sweet relish is a favorite topping on sausage dogs when we grill so what better way to utilize those extras than making a relish!

Here’s what I did

All I did was strain the contents of the leftover jars using a small hand strainer then put what remained back in the jar. I had two jars to do this and the mix just about filled one pint sized jar.  We also had a tiny bit of leftover sweet pickle relish that was barely a spoonful.  I mixed that in with the onions and peppers and our full jar of pickled onion relish was finished!  Can’t wait to try it on some sausage soon!

And of course everything is better with homemade bread.  The husband got a dutch oven for his birthday and this was the first thing he made in it. I so very much enjoy his aptitude for cooking 🙂

    what do you mean? i know there is probably a different (slash better!) way to do it, but my friend and I agreed the simplest way was to drag the "button" pic to the desktop & just add pictures to the side bar with the blog as the link (URL that clicking the image will link to). … do tell if there is an easier way to do so!
