Hey friends! I want to take today to introduce you to a pretty special lady. Her name is Laci and she blogs over at Simple Plates. It is absolutely one of my favorite places to find simple, heathy, and extremely delicious recipes!
My husband and I met Laci and her husband Robbie through our church in Mobile and were in a small group book club/supper club together with another couple I’ve mentioned before. Laci is also the one who introduced me to Ransom Cafe where she had volunteered and got me to come along too to help roll pizza dough & serve lunch 🙂 Anyhow, we rather enjoyed building a relationship with such down to earth, frugal minded, and healthy individuals who shared our affinity for simplicity and we miss them dearly!
Today I am sharing one of my favorite things Laci has made for us at one point or another, but seriously it was so very hard to pick just one thing. The Black Bean & Sweet Potato Chili is another favorite that you simply must check out 🙂

Serves 6-8 as a side dish
1/2 cup almonds, toasted at 300 degrees for 8-10 minutes
8 cups of broccoli, cut into bite size pieces
1/2 small red onion, finely diced
1/3 cup dried cranberries
1/2 cup mayo
1 tbsp sugar
1.5 tbsp vinegar (white vinegar or red wine vinegar)
1/4 tsp salt, or more to taste
Directions:
Combine broccoli, almonds, red onion and dried cranberries. Add sugar, salt, vinegar and mayo. Taste and add more salt and mayo to your preference. Refrigerate for 30 minutes or until serving.
