One thing I think most people who don’t adventure into “blogland” often don’t understand is how so many girls say that they have made “friends” through this random space and through their blogs. I was that way with a real life friend in Mobile who always talked of the lasting relationships she made through her blog & how close they were. But until you have been on this side of things, you will never understand! So, Evan, I completely understand now.
That being said, I am excited to introduce you to some of my favorite bloggy buds each month & have them share a recipe or project with y’all! Some random facts about me: A year ago, I got married to Hudson – my best friend and high school sweetheart. I love Jesus. I hate coffee but I’m still addicted to Starbucks. I’m from the northeast but secretly wish I lived in the south. Oh, and I absolutely LOVE making blog friends…so make sure you come “visit” my blog! But enough about me…today, I am sharing with you a recipe for chicken and broccoli stir fry!
First, let me explain how this recipe came about. Our kitchen was looking pretty bare and literally the ONLY things we had were chicken and broccoli. Isn’t that how it always is?!
I looked through recipe after recipe, and it literally seemed like each one had an ingredient I didn’t have. So after searching “chicken and broccoli recipes” and “what to put in a recipe if you don’t have (fill in the blank)” galore, I came up with THIS. And yes, my friends, it turned out delicious!
Makes 4-5 ServingsPrep Time: 15 mins / Bake Time: 15 mins / Total Time: 30 mins
3-4 chicken breast halves
2 tbsp. vegetable/canola oil
4 c. vegetables (broccoli, onion, celery)
1 1/2 c. chicken broth (one can)
3 tbsp. soy sauce
3 tbsp. cornstarch
2 tsp. brown sugar
1 1/2 c. rice
Prepare rice in separate bowl.
Stir fry chicken in hot oil in large skillet until brown.
Add vegetables; stir until done.
Mix broth, soy, cornstarch and sugar.
Add to skillet.
Boil, continue for 2 minutes.
Serve chicken mixture over hot rice.
