I’m always looking for an easy and quick breakfast option that packs a lot of protein. I typically go with sausage and eggs in some combination – but lets’ be honest – cleaning the skillet every morning is not my favorite. I love a good breakfast casserole, but I’ve been hard pressed to find one that didn’t have hash browns, potatoes, or bread in the list of ingredients. So after searching for a good bit, I decided to just wing it with what we had int the house and now it’s my favorite! All you have to do is make ahead on Sunday night, pop in the fridge, and cut a piece in the morning. Pop it in the microwave while you make your coffee and you’re good to go!
Ingredients
- About 1 cup fully cooked ham (cut into small pieces)
- About 1 cup bell peppers (cut into small pieces)
- About ¼ cup onion (cut into small pieces)
- Roughly 2 cups shredded cheese (I used a mix of cheddar & parmesan)
- 1 tablespoon flour
- 1/4 teaspoon Season-All Salt
- 1/4 teaspoon pepper
- 6 eggs (fresh & local are best!)
- ½ cup milk (we use organic 1%)
- ½ cup sour cream (light)
Directions
- Preheat oven to 350 degrees and lightly spray a 8×8 baking dish with cooking spray
- Cut ham & peppers and add to large bowl
- Add shredded cheese, flour, Season-All salt and pepper
- In a medium bowl, add milk, sour cream, and eggs (whisk well)
- Pour over ham mixture & stir well
- Combine and pour into baking dish evenly
- Bake uncovered at 350 degrees for 20-25 minutes or until a knife inserted in the middle comes out clean.
- Optional: sprinkle casserole with more cheese and return to oven for a couple minutes until cheese is melted and bubbly
- Let cool, put in fridge, and enjoy during the week!

This looks delicious! I might try it this weekend and sub Greek Yogurt for the sour cream, to up the protein a bit. Yum!
