In my quest to cook healthy, clean meals I’ve learned that fish is a staple. And I absolutely love salmon. Remember the easy baked salmon recipe in the aluminium foil boat with lemon and butter? Well, I took that basic idea and added a twist! Sriracha and lime.
Ingredients:
Sriracha chili sauce 2-4 tablespoons
1 lime
salmon filets
aluminum foil
cooking spray
I bought some beautiful filets of sockeye salmon and marinated them in two tablespoons of sriracha chili sauce mixed with fresh lime juice and lime zest [note: you can add more sriracha if you desire more heat]. First, preheat the oven to 350 degrees F. Then spray the aluminum foil “bottom” of the boat with cooking spray. Add the fish and pour the remaining marinade over the top of the filets. Pinch the aluminum foil closed and place in the oven for 15-20 minutes to your desired preparation! I like mine just medium and flaky.
Not only is this recipe healthy but it looks really fancy! And it really isn’t. My favorite!
