As you may well know, I am not the creative one int he kitchen. The husband loves to throw random things together, adding as he goes along, and creates the most delicious meals. Me on the other hand – I would go crazy. I love lists and organization though, so give me a recipe and I’ll cook it like a champ 😉 Thus the enormity of recipes lately as we have the perfect kitchen for experimenting with new dishes! And so I can make them again in the future – I need the detailed example so I can learn to perfect it. And y’all get to share on this journey with me! Enjoy this delicious (seemingly fancy, but ridiculously simple) shrimp dinner!
Ingredients:
- 2 tablespoons olie oil
- 1 tablespoon minced garlic
- 2 cups chopped tomatoes (drained) – I used one can diced tomatoes & one fresh tomato
- 1/2 cup dry white wine (get an American Sauvignon Blanc)
- 2 tablespoons fresh flat leaf parsley (finely chopped)
- 1/2 teaspoon oregano (crushed)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pounds large shrimp (peeled) – I used fresh but you can use frozen too
- 3 ounces feta cheese (1/2 inch cubes or large crumbles)
Directions:
- Heat oil in a large skillet over medium heat
- Add garlic to pan and reduce heat to medium low
- Cook until the garlic browns
- Add tomatoes, wine, half of the parsley, oregano, salt and pepper
- Cook until the sauce thickens (to about a light puree) stirring occasionally
- Add shrimp and cook until shrimp turn pink (around 5 mins)
- Add feta and garnish with remaining parsley
Serve over brown rice and with fresh avocado slices for a perfect date night meal or dinner party!
