
As you well know, tailgating during the fall is our favorite thing to do whether it’s on the plains or in the comfort of our own home. And when serving a main course like a smoked meat (which my husband knocks out of the park – you name it, chicken, sausage, ribs, brisket, butt… it will be the best thing you’ve ever eaten) we like to have a “lighter” side than one of our usual hot dips. This was the perfect choice for a cold and simple appetizer to munch on before halftime. This Black Bean, Corn, & Feta Salsa Dip is definitely a keeper! And it literally takes only minutes to make!

Black Bean & Corn Salsa

Ingredients
- 1 can of black beans
- 1 can of whole kernel yellow corn
- 3/4 to all of a bunch of green onions (chopped)
- 1/4 cup of apple cider vinegar (or a tad less)
- 1 tablespoon of olive oil
- 1 tablespoon of sugar (or Splenda)
- 1 cup of crumbled feta cheese
- 1/2 can of diced tomatoes (or about 1/2 cup chopped fresh tomato)
Instructions
- Drain the beans & corn, combine in a bowl.
- Add the apple cider vinegar, olive oil, & sugar to corn & bean mixture & stir to combine.
- Add green onions and feta cheese.
- Stir carefully so the feta doesn't crumble further.
- Serve with scoops for easy dipping!
