The husband was craving pimento cheese the day so we searched for a recipe, landed on a great one from allrecipes.com & tweaked the directions a bit for a “chunkier” dip than the recipe called for. I was never really a fan of pimento cheese until I tried it again this past year at the in-laws, and now I’m hooked! I do love a good cheese inspired dip after all 🙂
Ingredients:
- 2 cups shredded extra-sharp cheddar cheese (finely shredded)
- 8 ounces cream cheese (softened – 1/3 fat)
- 1/2 cup mayonnaise (light)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cayenne pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4-1/8 teaspoon black pepper
- 1 jalapeno pepper (seeded and minced)
- 1 (4 ounce) jar diced pimento (drained)
Directions:
- Place pimento, jalapeno, seasonings, and mayo in a bowl and combine until mixed well
- Add cream cheese and stir vigorously to thoroughly combine
- Slowly add the cheddar cheese and continue to combine until all items mixed well
- Serve with crackers & enjoy!
