I’m always looking for healthy meals that aren’t boring, especially for lunch, since I like to be adventurous with my food choices! The other big obstacle to eating healthy is being able to plan ahead and eat “on the go” and not in the comfort of your own kitchen. But more than the complications that tend to come from these choices, the way that I feel when we are dedicated to eaten healthier makes all the difference in the world. In addition to returning to a mostly Paleo lifestyle again, I am doing the Whole30 challenge with a friend this month so I am taking it back to basics. Here are a few of my go to favorites:
fruit smoothies: mixing fresh & frozen fruit with a splash of fruit juice makes for a quick & easy morning drink. Don’t have time to blend everything in the morning? Make the night before & freeze. Then put it in the fridge when you wake & it’ll be thawed in time for lunch!
fresh fruit: plain and simple. slice up a few varieties then mix & match all week long for a tasty breakfast option.
nut mixes: always hit a mid morning or late afternoon lull? Portion out your snack so you don’t mindlessly eat & try include almonds.
lettuce wraps: grill some chicken for the week and pre cut into slices. cupcake liners make for the best way to separate ingredients in a larger bin for this idea with avocado cubes & mango. Wrap in hearts of romaine or simply eat with a fork. Packing a peach (or an apple) is a great option for a touch of sweetness for your dessert.
The key for me is to always have a water bottle handy, load on the veggies, and pack in the lean protein. So join us in starting the new year off on a healthier foot, and be sure to check out the eat it. page for meal inspiration & lots of recipes!
