As the weather is hinting at cooler temperatures, I love the idea of comfort food with a twist. Not to mention mixing up a regular weekday meal with a fancy side, that is actually very simple. These sliced baked potatoes are the perfect addition to your rotation!

Cheesy Bacon Sliced Baked Potato

Ingredients
- 4 medium potatoes
- 1-2 teaspoons salt & pepper
- 2-4 tablespoons melted butter
- 2-4 tablespoons dried herbs (we used rosemary & thyme, but your preference here)
- 4-6 tablespoons grated cheddar cheese
- 4-6 tablespoons crumbled bacon pieces
Instructions
- Scrub and rinse potatoes.
- Preheat oven to 425 F.
- Cut potatoes into thin slices, but don't cut all the way through.
- Put potatoes in a baking dish & slightly fan out the slices.
- Sprinkle with salt & pepper, then drizzle with butter.
- Sprinkle with herbs.
- Bake potatoes for about 50 minutes.
- Remove from oven.
- Sprinkle with cheeses.
- Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside.
- Sprinkle with bacon crumbles.
- Serve & enjoy!
Notes
- Helpful tip: place a handle of a spoon or table knife along-side the potato to prevent the knife from slicing all the way through.
