Buffalo Chicken Sweet Potato

I don’t know about you but we love buffalo chicken! We are always looking for healthier options and this buffalo chicken sweet potato hits the spot! Perfect for gatherings & could certainly be adapted for more of an appetizer option using slices of baked sweet potatoes. So tasty, and so simple!

Ingredients Method

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts about 3 breasts
  • 3/4 cup hot sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp ground cayenne pepper
  • 1 tsp pepper
  • 4 sweet potatoes
  • 1 cup green onions chopped – for topping
  • 1 cup feta cheese for topping

Method
 

  1. Lightly coat a slow cooker with nonstick spray
  2. Place the chicken in the bottom of the slow cooker
  3. Mix hot sauce & salt, garlic & peppers
  4. Pour sauce mixture over chicken
  5. Cook chicken 4-5 hours on low
  6. Remove chicken & shred
  7. Bake the sweet potatoes – 400 degrees F
  8. Prick the sweet potatoes all over with a fork, then place them on a foil-lined baking sheet.
  9. Bake until the sweet potatoes are tender, about 45 minutes to 1 hour, depending upon the size of your sweet potato.
  10. Top each sweet potato with the chicken mixture, green onions & feta.
  11. You can top with additional hot sauce, ranch, or blue cheese as desired in addition to or instead of green onions & feta.
  12. Enjoy hot!
