I don’t know about you but we love buffalo chicken! We are always looking for healthier options and this buffalo chicken sweet potato hits the spot! Perfect for gatherings & could certainly be adapted for more of an appetizer option using slices of baked sweet potatoes. So tasty, and so simple!
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts about 3 breasts
- 3/4 cup hot sauce
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp ground cayenne pepper
- 1 tsp pepper
- 4 sweet potatoes
- 1 cup green onions chopped – for topping
- 1 cup feta cheese for topping
Instructions
- Lightly coat a slow cooker with nonstick spray
- Place the chicken in the bottom of the slow cooker
- Mix hot sauce & salt, garlic & peppers
- Pour sauce mixture over chicken
- Cook chicken 4-5 hours on low
- Remove chicken & shred
- Bake the sweet potatoes – 400 degrees F
- Prick the sweet potatoes all over with a fork, then place them on a foil-lined baking sheet.
- Bake until the sweet potatoes are tender, about 45 minutes to 1 hour, depending upon the size of your sweet potato.
- Top each sweet potato with the chicken mixture, green onions & feta.
- You can top with additional hot sauce, ranch, or blue cheese as desired in addition to or instead of green onions & feta.
- Enjoy hot!
