Churro Mini Muffins | Recipe

Ok, if you know me at all, you know I LOVE churros. This is for sure a well known fact about me. And I don’t hate it. Since quarantine I’ve had a hankering for some – and when I found a mini muffin tray on clearance during my Walmart essentials pickup – I knew what I was going to make! Churro mini muffins for the win!

Now, lest you think I’m some super mom/wife during quarantine so beautifully balancing working from home, homeschooling a toddler, and keeping a clean house – this was how these little guys came to fruition. It was a ROUGH Monday, and I went to the kitchen to make some of the Tik Tok famous whipped coffee and spoiler alert, I think I’m the only person on the planet that can’t make it. So, I’m standing over the mixer, practically in tears of failure over a stupid Tik Tok, when the husband came over and so sweetly exclaimed “aw, what are you making us?”. Ensure breakdown. But then I decided – you know what – it’s time to crank up the music and make those mini muffins. And it’s the best decision I’ve made.

So if you’ve had a rough day, try these super simple mini churro muffins out! They are TASTY, and super easy to make.

Churro Mini Muffins

Ingredients Method

Ingredients
  

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sugar divided
  • 1/2 cup brown sugar
  • 12 tbsps butter melted (divided)
  • 3 tbsps cinnamon (divided)
  • 2 eggs lightly beaten
  • 1 cup milk

Method
 

  1. Preheat oven to 350 degrees F.
  2. Grease a 24-cup mini muffin tin with cooking spray.
  3. In a large bowl, whisk together flour, baking powder and salt.
  4. Add brown sugar, 1/2 cup sugar and 1 teaspoon of cinnamon. Whisk to combine.
  5. Add egg, milk and 8 tablespoons butter and stir until the mixture is smoother.
  6. Scoop rounded tablespoons of batter into the greased muffin tin.
  7. Bake until a toothpick inserted into the center of the muffin comes about clean, about 12 minutes.
  8. Let muffins cool slightly in pan for about 5 minutes then carefully remove them from the pan.
  9. Mix the remaining 1/2 cup sugar and 2 tablespoons of cinnamon in a shallow bowl.
  10. Dunk each muffin in the remaining melted butter then toss in cinnamon-sugar mixture.
