
We took our favorite banana bread recipe and adapted it for mini muffins and they were divine! And perfect for little ones too.

Ingredients
- 3-4 ripe bananas smashed-using a potato masher works well for this
- 1/3 cup melted butter
- 1 cup sugar can easily reduce to 3/4 cup if you’d like less sugar
- 1 egg beaten
- 1 tsp vanilla they even make gluten free vanilla if you want to use that
- 1 tsp baking soda
- 1-2 cups chopped pecans you don’t need the nuts but it ads great texture & flavor
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F
- In a large mixing bowl, (with a wooden spoon) mix butter into the mashed bananas .
- Mix in the sugar, egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour last, then mix.
- Lightly mix in most of the nuts after all ingredients mixed well.
- Pour mixture into a buttered (or spray with Pam) mini muffin pan.
- Top with additional nuts.
- Bake for 20-22 mins
- Cool on a rack (in the pan).
- Remove from pan and slice to serve!
