Ingredients
  

  • 3-4 ripe bananas smashed-using a potato masher works well for this
  • 1/3 cup melted butter
  • 1 cup sugar can easily reduce to 3/4 cup if you’d like less sugar
  • 1 egg beaten
  • 1 tsp vanilla they even make gluten free vanilla if you want to use that
  • 1 tsp baking soda
  • 1-2 cups chopped pecans you don’t need the nuts but it ads great texture & flavor
  • Pinch of salt
  • 1 1/2 cups all-purpose flour

Method
 

  1. Preheat the oven to 350°F 
  2. In a large mixing bowl, (with a wooden spoon) mix butter into the mashed bananas . 
  3. Mix in the sugar, egg, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture and mix in. 
  5. Add the flour last, then mix. 
  6. Lightly mix in most of the nuts after all ingredients mixed well.
  7. Pour mixture into a buttered (or spray with Pam) mini muffin pan.
  8. Top with additional nuts.
  9. Bake for 20-22 mins
  10. Cool on a rack (in the pan). 
  11. Remove from pan and slice to serve!
