Bang Bang Shrimp

Servings: 4

Ingredients
  

  • 1 lb medium shrimp, peeled and deveined fresh gulf coast is the best!
  • 10 cups vegetable oil for frying
Sauce
  • 1/2 cup mayonnaise we use light
  • 1/4 cup sweet chili sauce 4-5 teaspoons chili garlic sauce we use Sriracha
  • 1 tsp granulated sugar
  • 1 tsp rice vinegar
Egg Mixture
  • 1 egg, beaten 
  • 1 cup milk (we use organic 1%)
Breading Mixture
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil

Method
 

Sauce
  1. Combine all ingredients for the sauce in a small bowl then cover and set aside.
Egg Mixture
  1. Combine egg with the milk in a shallow bowl and set aside as well.
Breading Mixture
  1. Combine flour, panko, salt, black pepper, onion powder, garlic powder, and basil in a third bowl and set aside too.
  2. Now it's time to bread the shrimp! First coat each with the breading mixture. 
  3. Dip breaded shrimp into the egg and milk mixture, and then back into the breading. 
  4. Arrange the coated shrimp on a plate and pop them into the fridge (for at least 20 minutes) to have it stick (helps with the frying). 
Frying
  1. Heat oil in deep fryer to 350 degrees (Fahrenheit) using whatever amount your fryer requires.
  2. When oil is hot, fry shrimp 2 to 3 minutes (or until golden brown). 
  3. Drain on rack or paper towels.
  4. When all the shrimp have been fried (and drained) drop the shrimp into a large bowl. 
  5. Spoon about ¼ cup of sauce over shrimp and stir gently to coat.
  6. Continue until the shrimp are coated in the amount of sauce you desire.
